Evaporated cow's milk is whole milk from which half the water has been removed by evaporation. You dilute it and add sugar to make the formula. The purpose of the water is to reconstitute the milk to the proper concentration of nutrients. Mothers milk is much sweeter than cows milk, so sugar is added to give the baby enough calories.

It is thoroughly sterilized in the process of canning, so it is free of germs when you open it. It can be kept indefinitely in the unopened can without refrigeration. There are many brands of evaporated milk. All are of about the same composition, so you don't have to worry about switching from one brand to another. And evaporated milk formula is less expensive than any of the prepared commercial formulas.

Always use evaporated whole milk for formula. Never use evaporated 2% or low-fat milk for a baby unless your doctor specifically prescribes it.
